  • 8 oz. Colby Jack cheese, shredded (divided)

  • 810 corn tortillas (6-inch, white or yellow)

Chipotle Crema

  • ½¾ cup Mexican crema or sour cream

  • 2 chipotle peppers in adobo

  • 1 teaspoon honey or sugar

  • Juice of ½ lime

  • 1 garlic clove

  • Salt to taste

Instructions

Step 1 — Prepare the Baking Sheets

Preheat your oven to 425°F (220°C). Lightly brush or spray two baking sheets with oil. This helps crisp the tacos evenly and keeps them from sticking during baking.

Step 2 — Cook the Ground Beef

Warm about a tablespoon of oil in a skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until no pink remains. Drain any excess fat to prevent soggy tacos.

Step 3 — Season the Beef Mixture

Return the skillet to the burner. Add taco seasoning, water, minced garlic, lime juice, diced green chiles, salt, and pepper. Stir well and let the mixture cook until most of the liquid evaporates. This concentrates the flavor and keeps the filling thick rather than soupy.

Step 4 — Add the Cheese

Once the mixture has thickened, stir in about 1 cup of shredded Colby Jack cheese. The cheese melts into the beef and acts as a binder so the filling stays put when you fold the tacos.

Step 5 — Warm the Tortillas

Wrap the tortillas in a damp paper towel and microwave for 45–60 seconds, flipping halfway. Corn tortillas must be warm and pliable to fold without cracking. If any feel stiff, heat them an extra 10 seconds.

Step 6 — Fill and Fold the Tacos

Working with one tortilla at a time, spoon about ¼ cup of the beef mixture onto one half. Add a small extra sprinkle of cheese, then fold the tortilla firmly over the filling. Lightly brush the outside with oil so it crisps beautifully in the oven.

Step 7 — Bake Until Golden and Crunchy

Arrange the tacos on the prepared baking sheets, leaving a little space between each one. Bake for 15–20 minutes, or until the shells are crisp and slightly golden. There’s no need to flip them—baking on one side gives you the perfect balance of crispness and tenderness.

Step 8 — Make the Chipotle Crema

While the tacos bake, blend together the crema or sour cream, chipotle peppers, honey, lime juice, garlic, and salt. Taste and adjust as desired—add more honey for sweetness, lime for brightness, or chipotle for heat.
